Ice Cream Mix-Ins: Part 2

Last month we reviewed two of the four ice cream mix-ins we offer. Today, we’ll go over the remaining two: variegates and flakes & barks.

Variegates

We produce two types of variegates: water-based and oil-based. Water-based variegates are formulated with water and require a thickener. Oil-based variegates set up firm when frozen. Going one step further, the R&D experts at Denali Ingredients have mastered the art of oil-based textured variegates, like the textured graham cracker swirl.

Flakes & Barks

Our low-melt flakes and barks are offered in a range of sizes, from about 1/4″ up to 1″ with our random break process. This means that flakes are produced in large sheets that are randomly broken into smaller pieces and are then screened for appropriate sizing. If you’re thinking, “what’s the difference between flakes and barks,” we have your answer. Barks are flakes with particulates added.
