From “Cow to Cone”: Penn State Ice Cream Short Course

In January, two members of the Denali Ingredients R&D team attended the Ice Cream Short Course, held at Penn State. With it being the oldest, best-known, and largest education program surrounding the science and technology of ice cream, the Denali team members had the opportunity to learn the ins and outs of ice cream manufacturing and the process from “cow to cone.”

This week-long course has over 20 workshops and various labs. When they weren’t studying and reviewing material, they got to build rapport with other individuals in the industry who are passionate about ice cream and decided to take the course.

“I had a super fun time at the 2024 Ice Cream Short Course,” said one of the Denali R&D team members. “It was such an enlightening experience being able to take a deep dive into the structure and production of ice cream, as well as meeting a vast number of people who work in the industry. I’m very grateful to Denali for giving me this opportunity to expand my knowledge and connections!”
